A rare culinary item once considered essential in top Parisian restaurants. The duck's carcass is put inside the press and crushed until the juice from the organs runs out of the pouring lip. The wheel at the top drives a turn screw which, attached to a disc, presses the carcass inside a removable pot with strainer. All mounted on an ebonised wooden base. Extremely heavy. Height 68 cms (to top of handle). Diameter of whell 26 cms. Base 42 x 23 cms. Circa 1900. Silver plated on cast iron.
This fascinating object is in good order. We haven’t tested it. There are some age spots on the silver plated surface but it still looks good. Alternatively it could be polished to the cast iron below.

Pressed duck is a French specialty in which the legs and breast are removed from a medium rare roasted duck, and the remainder of the bird is compressed in a duck press to extract the juices. These juices mixed with other ingredients produce a sauce which is served over the breast and legs.
